Sweet Potato + Black Bean Quesadilla

Quesadillas are one of my all time favorite foods. They can be eaten any time of the day and can be filled with absolutely anything! I shared this recipe with you guys a few months ago, and today I'm back with another one! This one features sweet potatoes which I've just started to love +


  • 2 tortillas
  • 1 tbsp olive oil
  • 1 sweet potato, peeled 
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 cup water
  • 1/2 cup Monterey jack (or sharp cheddar) cheese 
  • 1/2 cup black beans 
  • 1/2 cup spinach 

  • Chop the sweet potato into small cubes and place in a pan with the olive oil over medium-low heat. Add the chili powder and the cumin and combine. Add the water to the saucepan and cover. Allow to cook until the sweet potato is tender, about 8 minutes. Lightly mash the sweet potato.  Right before the sweet potatoes are done, add the spinach and mix together. 
  • On each of your quesadillas add a layer of cheese, a layer of sweet potato + spinach mixture, and a handful of black beans.
  • Cook each quesadilla on each side until golden brown, 3-5 minutes, over medium-low heat. 
  • Serve the quesadilla warm with any extra cheese or sweet potato mixture on the side! 
  • Enjoy!
