Avocado + Bell Pepper Quesadilla Recipe

Apparently in Canada they make quesadillas with 2 tortillas. Like they put one flat on the bottom and then another one flat on the top. I am the only person who find this crazy? No? Ok now it's awkward. I am a firm believer in single tortilla quesadillas, with the tortilla folded so nothing falls out when it gets all melty. If you don't already make them this way, first of all, what kind of monster are you? and second of all, just try it and thank me later. Today I have a quesadilla recipe for you guys that is delicious and super easy/quick to make!

Ingredients: 
- 1 Tortilla 
- 1/2 Avocado, mashed 
- 1/4 Cup Montry Jack Cheese (or Sharp Cheddar) (or really any kind of cheese you prefer) 
- 1/4 Cup Bell Peppers (any color)  
- 1 TBSP Olive Oil 

Directions: 
- In a nonstick pan over medium-high heat, pour in the olive oil
- Sautee the peppers until they are soft to the touch and set aside 
- On a plate, lay the tortilla flat and spread the mashed avocado over the entire tortilla
- Add the cheese and sauteed peppers to one side of the tortilla 
- Fold the tortilla in half (you should have a half-moon shape) 
- Spray the pan with non-stick cooking spray and heat over medim heat
- Place the filled tortilla in the pan 
- Allow to cook until the bottom is golden brown and then flip the tortilla over and repeat (about 3-5 minutes on each side) 
- Slice the quesadilla into triangles and top with any remaining avocado or cheese
