Easy Grill Recipes

Grilling food is such a summer staple. Grilling is such a simple way to make delicious meals. But I feel like we often get stuck on just grilling meats. Today I have a list of some of my favorite non-meat foods to grill over the summer.

  • Grilled Peppers - Slice peppers and then just pop them on the grill. Grill them until they start to darken. These will be soft, a little caramelized, and delicious.
  • Grilled Pineapple - Peel and slice a pineapple into rounds or strips. Melt ¾ stick of butter in the microwave. Stir in ¾ cup brown sugar until it’s combined. If desired add a pinch of cinnamon. Brush over the pineapple slices and place on the grill. Grill until they start to darken, about 3-5 minutes on each side. This makes a delicious dessert that’s so simple.
  • Grilled Corn - Soak the corn in the husks for about 15-20 minutes. Then husk and place on the grill. Rotate the corn until all the sides are slightly blackened, do not over grill. Brush with butter or a little bit of mayo. Then squeeze lime juice over the corn. Sprinkle the corn with a little bit of chili powder, black pepper, and salt to taste. Then, sprinkle with cotija cheese and serve warm.
  • Grilled Peaches - Similar to the pineapple, these grilled peaches are a super simple way to make a delicious dessert. Halve 4 ripe peaches and set aside. In a small bowl mix together a softened stick of butter, 1 teaspoon of cinnamon, 2 tablespoons of granulated sugar, and a pinch of salt. Brush the butter/sugar mixture on the peaches and grill the peaches until they are golden brown. If desired, slice the peaches smaller for more servings. This dessert is super simple and is beyond delicious.
  • Grilled Flatbread Pizza - A grilled flatbread pizza is a delicious and unique way to use your grill. Start by using store bought flat bread or by making it using this recipe. Top off the flatbread with roasted tomatoes, pesto, mozzarella, grilled chicken, or anything else you can think of.

These are by far my 5 favorite non-meat grilled options. They all taste delicious and are perfect for summer. Share any other of your favorite grilled food recipes and I’ll be sure to check them out.
