My favorite Latkes recipe!

Happy Hanukkah!
Hanukkah is definitely one of my favorite holidays because of the food!! Tuesday, I posted a sufganiyot recipe so make sure to check that out too! But today’s recipe is the classic latkes! You may think all latkes are created equal, but they aren’t! This is the recipe I have been using for years and love so much!

1 pound of potatoes
½ cup of finely chopped onions
1 large egg
½ cup olive oil
-Preheat the oven to 250°F
-Peel and grate the potatoes
-Soak the potatoes in cold water for 1-2 minutes
-To dry the potatoes, place them in between 2 kitchen towels and wring out as much liquid as possible.
-Heat ¼ cup of oil in a 12-inch nonstick skillet over medium-high heat
-Add a pinch of salt and some pepper in the oil
-Spoon 2 tbsp of the potato mixture and cook for about 5 minutes on each side
-Place latkes on paper towel to absorb any excess oil

Personally, I like my latkes plain but you can always add sourcream or apple sauce.
