Potato Empanada Recipe

So I was recently at Sur la Table (literally my life) and I picked up a really really really cool new gadget. I got this pocket maker. Basically you just press down on it and it seals a pocket together. And it comes in three fun shapes. This is so helpful to make empanadas or samosas, or different kinds of pastries. And trust me you’ll be seeing a ton of recipes using this. So now I’ll just jump right into the recipe.

This recipe makes 4 fairly large empanadas. And just FYI this is not a spicy recipe at all.

Ingredients :
  • 1 potato, peeled and sliced
  • ¼ a cup of peas
  • Just a small bit of onions, not a lot, maybe like one or two slices
  • 1 package of Pilsbury pie crusts, you’ll need both of them

  • Preheat the oven to 375 degrees.
  • Set your potato in water (with a little added salt) and bring the water to a boil, then let it simmer until you can stick a fork in it easily (about 15-20 minutes).
  • Defrost the peas if they’re kept in the freezer.
  • Put the onions in a frying pan and set stovetop to a medium heat, fry the onions for about 10 minutes depending on your heat setting.
  • Mark an outline on one of the pie crusts with the shape of your pocket makers and put put the filling in it, about ½ an inch high. (I have outlines on one side and them filled on the other)
  • Follow the instructions on your pocket maker about how to make the actual pocket. It's pretty easy you basically just push down the button.
  • You may need to add a little extra dough if your pockets are overfilled or breaking but thats ok. Just tear off a piece of the extra dough and place it over the open or breaking areas.
  • Put your empanadas in the oven for 13-17 minutes, until light golden brown.
  • Enjoy!
