Breakfast Pizza

I, like most human beings, like pizza. But as many of you know, it’s really not that healthy. I decided I wanted to start a new series called Project: Pizza. I want to help people find new and different recipes for a healthier version of pizza.

So today I have a single serve healthy version of a pizza that I LOVE. This recipe actually makes like two mini pizzas, one on each half of the bagel.

  • 1 bagel
  • 1 sliced avocado
  • 2 eggs
  • A few slices of mozzarella cheese
  • Start by preparing the eggs sunny side up and by lightly toasting both sides of the bagel.
  • Divide the avocado slices in half and place each half on a bagel.  
  • Place a few slices of mozzarella on top of the avocado.
  • Place the one sunny side up egg on each ‘pizza’.
  • Sprinkle a little salt and pepper to taste on each pizza.

Ok so thats the recipe. It’s super easy to make and delicious. This is also really healthy with a ton of veggies and protein. It’s also easy to add extra toppings like tomatoes or onions.
